Nama shoyu is supposed to be a raw product, acceptable on a raw food diet.
Nama Shoyu is a traditional Shoyu or Soy Sauce which is made by the Oshawa Company. Georges Oshawa was one of the main contributors to popularizing the Macrobiotic diet. The reason that this product is more expensive is that it is crafted the traditional way. . . as bi-product of making Miso - a long process involving years rather than months. The nutritional benefits of Nama Shoyu are consequently of a very much higher quality. The last time I saw any Nama Shoyu was at Sherwin's in Chicago. It is rather like using an excellent aged wine in the sense that for the connoisseur it is worth the price.
