Quick Orzo Veggie RisottoSauté 1 diced onion in 2 Tbs. olive oil until soft. Stir in 1 cup whole-wheat orzo, 2 cups low-sodium broth, 1 cup milk, and ½ cup sundried tomatoes. Simmer, stirring often, until most of the liquid is absorbed, about 10 min. Stir in 1 bag baby spinach and ½ cup Parmesan cheese.
