fruit treats

fruit triangle treats:

ing:
-3 apples peeled, cored and sliced into 1/4 inch slices (can also try peaces, pears, blueberries, etc)
-1 tbl walnut oil
-1 tbl lemon juice
-1 tbl honey
-2 tsp ground cinnamon
-3 eggs
-1/2 cup milk (can use soy or alt)
-1/2 cup whole wheat flour

steps:
-pour oil into 10 inch pie pan and spread to cover bottom
-pour lemon juice, honey and half of cinnamon over apples/fruit and mix
-beat eggs separately in bowl (well)
-add milk to eggs
-mix 1tsp cinn into flour, then add to egg/milk to make a batter
-pour batter into pan
-cover surface with apple/fruit slices (they will sink in)
-bake at 375 for 30 minutes or until batter is firm

recipes

homemade oatmeal bars
(can freeze extras)
ingr:
-3 cups whole oats
-2/3 cup whole wheat flour
-1/2 tsp baking soda
-1/2 tsp salt
-1tsp ground cinnamon
-1/3 cup honey
-1/3 cup walnut oil
-1 egg, beaten
-3 tbl orange juice (or water)
-1 tsp vanilla extract

-preheat oven to 350
-combine all dry in bowl, mix well
-combine all wet, mix well
-mix wet/dry
-use a spatula to flatten into large rectangle on oiled cookie sheet (1/3 inch thick)
-bake at 350 for 12-15 minutes until light brown and firm
-let cool, then cut into smaller bars.
-consider adding/mixing:  nuts, seeds, cereal, preztels, dried fruit, chips, coconut
